Sabrina and Tucker have had a virus hit their computers so have not been able to join us for the promised spotlight on Thursday!

Both their laptops are at the local Nantucket computer shop for repairs and we hope that all will be resolved and their spotlight will be posted this week!

Sticky Toffee Spoon Cake

Ingredients

1 ½ cups butter

1 ½ cups dark brown sugar

6 tbsp. golden syrup

4 eggs, beaten

1 cup self-rising flour

¼ tsp. salt

Directions

Preheat oven to 350. Grease 6 ramekins. Heat ¼ cup butter, ¼ cup sugar, and syrup in a pan over low heat until smooth. Pour the sauce equally into the ramekins. Melt the rest of the butter and sugar in a pan. Remove from heat. Cool for 10 minutes. Mix in eggs.

My family was privileged to celebrate the life of my dear Grandma yesterday with my Misses 11, 9 and 6 all contributing, sharing their memories of Grandma Gene along with my niece and nephew. It was a special time to remember a very special lady.
